Potatoes Romanoff

This has been a favorite of mine for years, great company dish.
Ingredients
- 4 medium Russet potatoes
- 1 cup sour cream
- 1/4 to 1/2 cup chopped onion
- 1 1/4 cup shredded Colby cheese
- 1 tsp salt (optional)
- 1/4 tsp pepper
- paprika
Directions
- Cook potatoes in jackets until tender. Peel and shred.
- Combine shredded potatoes with sour cream, onions, 3/4 cup cheese, salt, and pepper.
- Turn mixture into buttered 1 1/2 quart casserole dish. Sprinkle with remaining cheese and paprika.
- Bake uncovered in 350 degrees for 40 minutes. May be assembled in advance and refrigerated until time to bake and serve.
